Job Description: Culinary Specialist

The Culinary Specialist is responsible for the quality, quantity, tastiness, and freshness of all Hot Choice Buffet products. The Culinary Specialist pays special attention to speed, cleanliness, organization, and product specifications.

Food Production:

• Adheres to Golden Corral's standards by preparing Hot Choice Buffet products, including Carving and Display Cooking options, according to their specific recipes and procedures.
• Abides by Golden Corral standards while grilling to meet quality benchmarks.
• Promises that all fried items are kept fresh and served with optimal heat.
• In the absence of the Buffet Attendant, the Cook must replenish the items at the Display Cooking Station.
• If the Carver is not around, they assist patrons in choosing from the assortment of carved meat offerings.
• Thoroughly following and using the buffet production system to ensure quality standards and compliance with shelf life regulations.

Operational Excellence:

• Keeps all products at the correct temperature while cooking, holding, and serving them.
• Uses the Hot Choice Buffet Production Guide and the Display Cooking Hot Cook Production Guide to oversee the inventory of all hot cook items effectively.
• Handles the beginning and completion of administrative formalities.
• Abides by the recommendations in the Equipment Maintenance manual for the proper care of machinery.
• Ensures that food items are restocked and rotated following the FIFO protocol.
• Evaluates product inventory and compares it with the Manager's build-to checklist at the start and end of each shift.

Cleanliness:

• Ensures that the Hot Cook area and smallwares are sanitary and examines dishes for cleanliness to guarantee food safety.
• Supervises the duty timetable and ensures that cleanliness, service, and quality levels are maintained.
• Observes the regulations imposed by the local health authorities.
• Regularly remove buildup and maintain cleanliness on the char grill to ensure both product quality and sanitation are upheld.

Guest Service:

• Guarantees the continuous warmth and freshness of Hot Choice Buffet items, encompassing Display Cooking selections, to ensure guest satisfaction.
• Comprehends and complies with the job responsibilities connected to just-in-time delivery.
• Acts in a pleasant and courteous manner when attending to guests and helping them select products.
• Sustains a level of professionalism in all forms of communication.
